The Excellence of Laudemio Frescobaldi Extra Virgin Olive Oil

The Frescobaldi family has Tuscan roots and a history that began a very long time ago. Already in medieval times, they became treasurers of the English crown. With the arrival of the Renaissance, they became patrons of great Florentine works. In addition to these significant achievements, for centuries, they have been dedicated to the cultivation of their lands for wine and olive oil production in Tuscany. In 1985, the company faced a severe test with a frost as low as -25°C, but in reality, this event turned out to be the beginning of a true revolution. In 1988, the Laudemio Frescobaldi oil was born, an excellent product now recognized worldwide.

After a brief introduction to the unique qualities of this product, it won't surprise you to learn that Laudemio Frescobaldi oil has won numerous national and international awards since 1997 and is sold not only in Italy but also all around the world.

Excellence in Five Rules

How does Laudemio Frescobaldi olive oil manage to be so good, of high quality, and thus recognized worldwide? It all starts with the land and the meticulous care throughout the production process.

  1. The properties of the olives are attributed to the altitude and microclimate in which they grow. Frescobaldi's olive groves are located in Tuscany at elevations between 200 and 500 meters above sea level.
  2. The olives are harvested between October and November, before they reach full ripeness. This way, they will retain all their properties.
  3. Within no more than 24 hours from harvesting, the olives are taken to the milling process. The quick turnaround is possible primarily because the Frescobaldi family owns a proprietary olive press, which contributes to overseeing and managing the entire production chain.
  4. Laudemio Frescobaldi oil remains durable and brilliantly green because it is filtered, appearing clear and free of residues. Of course, attention must be paid to how it is stored: always in its original packaging, tightly sealed, and away from heat sources.
  5. After the entire production process, there's just one last step: tasting. The final product is evaluated by expert tasters, and only those deemed of the highest quality are selected as Laudemio Frescobaldi.

Tasting and Taste Profile: Characteristics of Frescobaldi Laudemio Olive Oil

"You should certainly feel the sensation of freshness, the fruit from which it comes, namely fresh olives. It means they were harvested at the right moment, pressed shortly after, and well-managed from start to finish. You shouldn't perceive "warm" sensations or odors, the technical term used is "reheating." When the oil has oxidized or when the olives were too mature, it gives off a warm, wool-like smell." These are the words of Matteo Frescobaldi, Brand Ambassador of Laudemio Frescobaldi.

During the olive oil tasting, therefore, Laudemio Frescobaldi gives a sensation of freshness in the mouth and doesn't emit warmth. There are three main characteristics of a quality oil: fruity, bitter, and spicy, just the right amount. The oil featured in this article possesses all of them.

The best way to taste this oil is to avoid eating or drinking anything in the hour before to fully savor all the sensory nuances.

How to Determine if an Oil is Good?

"Let's start with three senses: sight, smell, and taste. For sight, you need to observe the brilliance and clarity: high-quality oil should be transparent. Tuscans prefer a brilliant emerald green... The more intense the color, the younger the oil. But that doesn't mean that in the following months, when the color is less vibrant, it's less good. The important thing is that it's not cloudy and dull. If the oil is cloudy, it's not perfect", Matteo Frescobaldi explains.

So, a good oil not only needs to have a fresh taste and a pungent aroma at the right level, but the color also has its rules. It should be bright and not dull. Matteo adds, "Even though it's right for the taste to be persistent, perhaps with a pleasant spiciness, you shouldn't have this greasy sensation in your mouth or a film on your tongue. From a technical standpoint, it's called clean, not heavy." All these are clues to understand that the oil in question possesses all the properties and nutritional benefits of a quality product.
